Nigella’s Pear and Ginger Muffins

I had a couple of pears which had turned too yellow for the children’s liking so I decided that I would find a different way to get the kids eating them.  I headed to Nigella Lawson’s Nigella Express and found this really easy recipe.  I decided that the kids probably wouldn’t like the ginger too much so substituted with cinnamon which they love.  You could use any spice.  Also, this would work just as well with diced apple rather than pear.

Pear and Ginger Muffins

Ingredients:

  • 140gm sour cream or yoghurt
  • 120gm vegetable oil
  • 1 tbs honey
  • 2 eggs
  • 250gm plain flour
  • 2 tsp baking powder
  • 150gm caster sugar
  • 75gm brown sugar
  • 1 tsp ground ginger (or cinnamon)
  • 300gm pear, peeled and diced (5mm) – about 2 pears

Method

  1. Preheat the oven to 200 degrees and line a muffin tray with muffin papers.
  2. Place the oil, sour cream / yoghurt, honey and eggs in the TM bowl.  Mix on speed 3 for 10 seconds.
  3. Add the flour, baking powder, both sugars and the spice.  Mix on speed 4 for 5 seconds.
  4. Add the pear.  Mix on reverse speed 4 for 10 seconds.
  5. Bake for approximately 20 minutes or until cooked.
